Every venue makes a choice about what music is for. In a large club it is the entire event: the volume is the point, and everything else in the room organises itself around it. In a smaller, seated venue it does a different job, holding the atmosphere at a level that leaves room for everything else.
White Chocolate has made the second choice, deliberately. There is a stage and an evening programme, and the sound is set so that the cellar has energy without the salons becoming unusable for conversation.
The Approach
Music here builds through the evening rather than starting at full volume. Early on, from 20:00, the room is quiet and the sound is background. From around 22:00 it lifts and the cellar takes on considerably more energy.
It does not reach the point where the private salons stop working as places to talk. That ceiling is intentional.
